The old grocery store on First Avenue and Cherokee Street will soon be a Paleo-friendly, gluten-free restaurant, Blooming Beets.

The Denver location is one of two new spots for the Boulder-based café. Another one is opening Dec. 1 in Phoenix.

Blooming Beets‘ menu is 100 percent gluten and grain free, and its meat comes from animals that are wild caught or locally pastured and grass fed. The kitchen uses organic and local ingredients whenever possible, and does not use processed sugar, seed oils or GMO soy and corn.

Here’s a sample of the menu:

  • Beet and kumquat salad: kumquat, pickled organic beets, organic arugula, lemon vinaigrette, Haystack Mountain goat cheese ($8/$12.50)
  • Bunless smokey wild burger: ground elk, venison, bison and wild boar, poached egg, crispy sweet potatoes, organic arugula, smokey aioli ($15)
  • Brussels sprouds with apple, candied peacans, apple cider reduction and lemon aioli ($7.80)
  • Herb sauce gnocchi: grain-free gnocchi, herb garlic sauce, raw goat cheese, pistachios ($16.50)

Update: Owner Iva Paleckova said in an email that the space will be completely redone and won’t look anything like it did before. They are preserving a few of the brick walls, though, and Paleckova describes the future look of the place as “rustic, intimate and uplifting.”

The target opening date is May 3.

Hours will be 11 a.m.-2 p.m. and 5:30-8:30 p.m. Tuesday through Friday, and 10 a.m.-2p.m. and 5:30-8:30 p.m. Saturday and Sunday.
